Buttermilk Biscuit Breakfast Sandwiches

Ingredients:

For the Biscuits:

  • 2 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon salt

  • 6 tablespoons cold unsalted butter, cut into small cubes

  • 3/4 cup cold buttermilk (plus a splash more if needed)

For the Sandwich Fillings (choose your favorites):

  • 4 large eggs

  • 4 slices cheddar or American cheese

  • 4 slices cooked bacon or breakfast sausage patties

  • 1 tablespoon butter

  • Salt & pepper, to taste





Instructions:

  1. Make the Biscuits:

    • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

    • In a large bowl, whisk together flour, baking powder, baking soda, and salt.

    • Add cold butter and cut it in using a pastry cutter or your fingers until the mixture looks like coarse crumbs.

    • Pour in the cold buttermilk and stir just until a shaggy dough forms.

    • Turn the dough out onto a floured surface. Gently pat into a rectangle and fold it over itself 2–3 times (this gives you layers!). Pat down to about 1-inch thick and cut into rounds or squares.

  2. Cook the Eggs:

    • In a nonstick skillet, melt 1 tablespoon butter over medium heat.
